Killer brisket recipe below. I had the pleasure of smoking briskets for Brantley Gilbert Pepper Stick Figure in the last couple weeks. Wasn't my normal brisket cook but I will be using this recipe moving forward. The better quality beef you get is always the best option. These were american wagyu beef briskets. When trimming a full packer brisket, i remove all fat and silver skin from top meat side to ensure i get the best bark. Bottom side of the brisket i try and leave about 1/4 thick fat cap
